The PM Pastry Arts students of Platt College (plus a few others) had a great time last night at the OKC Museum of Art viewing of "Kings of Pastry" Directors: Chris Hegedus & D.A. Pennebaker 2010. So, I was asked many times by my students, "Did you like it?" Without getting too academic, or starting a discussion about the particulars of art and pastry, here are my thoughts.
If I had to distill the film into three main themes, they would be: Sacrifice, Practice, and Perseverance. This theme resonates throughout the film and motivates the best pastry chefs of the world to not only be the best they can be, but to be the best there is. Without sacrifice and practice and perseverance the allusively simple cream puff or the seemingly insurmountable distinction of MOF would not even be possible. I firmly believe that students, instructors, working pastry chefs, experienced pastry chefs, MOF candidates, MOF themselves all are or should be familiar with these themes. To be successful at any level and in any field for that matter, one should embrace these themes wholeheartedly. I too realize the hardships of sacrifice. The time away from my family. The hours practicing new techiniques and new applications of old techniques. The feeling of failure when something I think is the best I can do, the best there is, well, is not. These are feelings we should always keep close. For these reasons, I really enjoyed the film and recommend it to any of you who is ready to start climbing a mountain, any mountain. I hope this film is a great lesson to my students and motivates them to be the best there is.
Pastry school is a wonderful and rewarding experience. It is also a very difficult and challenging and humbling journey. As Director of Pastry Arts for Platt College, I will give those interested a look into the kitchen. You will see through the eyes of the students and the instructors. Hopefully, you will learn about who we are, what we do, how we experience baking & pastry arts and how those experiences affect those around us!

Kitchen is Open!
Welcome to our kitchen! I will attempt to give you an inside look into Pastry Arts School. You will see different topics and different perspectives. Some of the topics will be explored regularly as a part of a series. Other topics may be anecdotal depending on what happens in the kitchen the previous week.
